How to Brew CTC Chai — The Kadak Method
CTC is built for milk-based chai. Here's how to get that perfect deep reddish-brown cup every time.
- Bring 150ml of water to a full rolling boil
- Add 1 heaped teaspoon of CTC tea
- Boil for 2 minutes — watch the colour deepen
- Add 75-100ml of milk
- Bring back to a gentle boil for 1 minute
- Add sugar, adrak or elaichi to taste
- Strain and serve immediately
Pro tip: The longer you let it simmer after adding milk, the deeper the colour and the stronger the body. You'll know it's ready when the entire kitchen smells like Assam.
How to Brew Orthodox Black Tea
- Heat water to 95°C — just off a full boil
- Add 1 heaped teaspoon of whole leaf per cup
- Steep for 3-4 minutes
- Remove leaves immediately
- Drink black first — then add a tiny splash of milk if preferred
Pro tip: Orthodox is best drunk black. Milk masks the natural malt and honey notes that make it special.
How to Brew Oolong Tea
- Heat water to 85-90°C — not fully boiling
- Add 1 heaped teaspoon of oolong leaves
- Steep for 2-3 minutes for first brew
- Remove leaves — save them for the next brew
- Second brew: 3-4 minutes. Third brew: 4-5 minutes. Fourth brew: 5 minutes
Pro tip: The second and third brews are often the best. Each steep unlocks a completely different flavour layer.
How to Brew Green Tea
1. Heat water to 80°C — boil first, then let it cool for 3-4 minutes
2. Add 1 teaspoon of whole leaf green tea
3. Steep for exactly 2-3 minutes
4. Remove leaves immediately
5. Drink plain — no milk, no sugar
Pro tip: If your green tea tastes bitter, your water is too hot. 80°C is non-negotiable.
