Most commercial tea bags contain fannings and tea dust β the broken, powdered remnants left over after whole leaf tea has been processed and sorted. These are the scraps.
Because fannings are already broken and have a much larger surface area exposed, they release tannins and bitter compounds almost instantly in hot water. The result is a fast, dark, bitter cup, but one that has lost most of its natural oils, aromas and nutritional compounds before it even reaches your cup.
Fannings also lose their freshness much faster than whole leaves. A tea bag sitting on a supermarket shelf for 6 months has already lost most of what made it worth drinking.

The intact leaf retains its natural oils, flavour compounds, antioxidants and aromas in a way that broken fannings simply cannot. When you drop whole leaves into hot water, you're releasing the full complexity of the plant slowly and gently β producing a cup that is layered, aromatic and genuinely flavourful.

This is where it really matters. The catechins, polyphenols and L-theanine that make tea beneficial for your health are concentrated in the natural oils of the leaf. When the leaf is crushed and broken during CTC or dust processing, a significant portion of these compounds are lost through oxidation before you even open the packet.
